This recipe was born from me trying a small batch brownie recipe from a popular food blogger and not liking it very much. I needed a small batch for my next door neighbor’s kiddo who is obsessed with my chocolate cream cheese frosting (put link) since I had some extra and frosted brownies are truly some of the best desserts out there. I was also supposed to write this post like over a week ago but oops. Let’s just blame my lack of self motivation on quarantine life, ok?

Ingredients:
1/4 cup semi-sweet chocolate chips
4 tbsp unsalted butter
1/2 tsp instant coffee
3/4 tsp vanilla
1/2 cup + 1 tbsp sugar
1 egg, room temp
1/4 cup flour
1/3 cup cocoa powder
1/4 tsp salt
1/8 tsp baking powder
1/4 cup semi-sweet chocolate chips (optional)
Preheat the oven to 325º and line a 9×5 loaf pan with parchment paper. In a medium microwave safe bowl melt the 1/4 cup of chocolate chips and butter at 25 second intervals until smooth. With a wooden spoon mix in the instant coffee, vanilla, and sugar. Stir together until thoroughly mixed. In a small bowl whisk your egg and then pour it into the brownie mix. Stir to combine. Add in the flour, cocoa powder, salt, and baking powder and stir. Stir in the chocolate chips and transfer the batter into your loaf pan. Bake about 30 minutes or until center is set. Let cool completely until cutting into the brownies.
