Turkey Meat Spaghetti Sauce

This spaghetti sauce recipe came about because I’m not the biggest fan of red meat and I wanted a homemade sauce where I could control the ingredients. If you’ve ever looked at the ingredient list for jarred tomato sauce there can be some stuff that makes you cock your head and go, “really?”. But not with his recipe! It’s all fresh and SO good.

Ingredients:

1 lb ground turkey 

1 small sweet yellow, chopped

3 carrots, chopped

3 cloves garlic, minced

1 28oz can peeled crushed tomatoes

splash of red wine

1 tsp salt

1/2 tsp pepper

1/2 tsp oregano

handful of parsley, chopped

4 big leaves of basil, torn 

In large pan over medium heat start to break up the ground turkey into chunks with your spatula. Cook and stir until meat is completely cooked (no pink). Drain any fat. Once meat is fully cooked tuna heat to low.

In a small pan add drizzle olive oil and turn meat to medium-low. Add in chopped onion, chopped carrots, and minced garlic. Toss with olive oil and cook until onions are translucent and carrots are beginning to soften (about 5-7 minutes). With this meat sauce feel free to add in any other veggies you want; celery, shredded zucchini, etc, but if it’s a firmer vegetable I would cook it with the onions & carrots so it can soften a bit. Transfer veggie mix into the pan with the meat and stir together. Pour in can of tomatoes and a healthy splash of red wine. Stir, then add in salt, oregano, and pepper. Cover and let cook for 10 minutes on low heat. Add in parsley and basil and continue to allow the sauce to simmer for another 15-20 minutes. Serve over your favorite pasta, or mixed greens/kale. Top with parmesan cheese (like a mountain of it)
